4 medium zucchini (about 1.5 pounds) sliced
2 T grated parmesan cheese
2 T fresh dill, chopped
1 T evoo
1 tsp red pepper flakes
bring pot of water to a boil. add zucchini to water and cook for 30-60 seconds or until tender crisp. drain.
transfer zucchini to bowl. add remaining ingredients. gently toss and serve.
